The number of wine producers in Ukraine is steadily increasing.
The Wine Guide of Ukraine 2019 contained information on 48 Ukrainian wineries and descriptions of 183 of the best Ukrainian wines. By comparison, the Wine Guide of Ukraine 2021 already presents 84 Ukrainian wineries with descriptions of 330 wines.
According to the State Statistics Service of Ukraine, in 2021 (January–October) 370.08 thousand decaliters of wine with an actual alcohol content of no more than 15% (excluding carbonated, sparkling wines and wines with protected designation of origin) were produced.
Unfortunately, it is not possible to determine the exact number of wines produced from the Odesa Black grape variety; however, it can be stated with confidence that Ukrainian winemakers actively work with this variety. This is evidenced, in particular, by the results of a tasting marathon held in Odesa in March 2021, dedicated exclusively to wines made from the Odesa Black variety, where 34 wine samples produced from Odesa Black grapes were presented.
In 2023, the competition “Best Odesa Black 2023” also featured 33 wine samples made from Odesa Black.
According to the Wine Guide of Ukraine 2021, varietal wines from Odesa Black grapes are produced by the following wineries 1. Veles LLC, TM Kolonist: still red dry wine, aged 6 months;
2. Marian Shevchenko Family Winery: red dry wines;
3. SliVino Village Winery: red dry wines;
4. Klara Marsala Family Winery: red dry wines;
5. Home Wine From Boris Winery: red dry wines, aged 3 months;
6. Giginyeishvili Wine House (Private Enterprise): red dry wines, with/without aging;
7. TM Negotsiant: red dry aged wines;
8. Vitalii Malanchuk Winery: red dry wines, aged 1 year in a French oak barrel;
9. Biologist Craft Winery: red dry wines, aged 9 months in new oak barrels;
10. Ihor Maksymenko Winery: red dry wines;
11. Narovylo Winery: red dry wines;
12. Don Alejandro Winery: red dry wines, aged 6 years in bottle.
This list can be expanded with producers whose information was not included in the Wine Guide 2021 but whose Odesa Black wines were presented at the above-mentioned tasting marathon. These include:
- Banno Winery: red dry wines;

- Winemaker Viacheslav Kyrov: red dry wines;
- Manzul Winehouse: red dry wines;
- Vinopion: red dry wines;
- Uman Winery: red dry wines;
- Chorna Fortetsia: red dry wines;
- Kyrnychky, Izmail District: red dry wines;
- Winemaker Oleksii Khodakov: red dry wines;
- Wine Valley (Oleksandr Shushpanov): red dry wines;
- Winemaker Oleksandr Ovchynnykov: red dry wines;
- Wineidea, 2018, Kyiv Region: red dry wines.
The Odesa Black grape variety is also used in blends by the National Scientific Centre “Institute of Viticulture and Winemaking named after V. Ye. Tairov” of the National Academy of Agrarian Sciences of Ukraine . In particular, based on the Odesa Black variety, the NSC “IViV named after V. Ye. Tairov” has developed production technologies for the following wines: Tairovske Red (table red dry vintage wine), Scythian Red (semi-sweet wine), and Tairovske Tsarske (red dessert wine) .
The Father’s Wine family winery uses Odesa Black in blended wines such as Red Triangle and Lytse.
Don Alejandro Winery also produces blended “author’s” wines using Odesa Black.
Thus, we can conclude that the Ukrainian market features various categories of wines made from the Odesa Black grape variety, produced using different technologies (with various types of aging or without aging). These are primarily red dry wines, rosé dry wines, semi-sweet wines, and dessert wines.
